fish (seabass) with spiced salt

A quick recipe for when you have little time but a fish available !
Five minutes preparation + 15 baking in the oven for a fish of 700 grams approximately
In theory the fish should cook 10 minutes for every 2.5 cm thick ..... but everything is relative!
It 's a healthy preparation, no fat , easy and very quick.
Ingredients :
a sea bass of about 700 g ( but also sea bream or hammour )
Coarse salt 2 kg
Spices (I have used rosemary , thyme , marjoram , sage, parsley and two basil leaves )
For the sauce ( “salmoriglio” ) :
extra virgin olive oil
juice of half a lemon
a pinch of salt
pepper
parsley
garlic
preparation :
Preheat oven to 200 degrees
Take all the spices of your choice ( I have the advantage ofmy vegetable garden ) and chop coarsely
In a bowl , put the salt and add the herbs, mixing everything .
Clean and wash the fish well.
In a pan , a little bigger than the fish , spread a layer of flavored salt, lay the fish down and cover it carefully with the rest of the salt . It’s important that the coverage is complete and homogeneous. Help it by moistening your hands with water and shaping the salt.
Bake for about 15 minutes in a preheated oven . Depending on the size of the fish it may take a little more or less.
When ready , pull out the pan from the oven and break the salt crust with a small hammer or similar tool , extract the fish and clean it for to serve it.
You may serve it with a simple oil-based “salmoriglio” with a pinch of salt , pepper, parsley and, for those who like it, a clove of garlic.
If you have no herbs available , try the basic version with only salt. It’s delicious!
