mascarpone cream with amaretti and bitter choccolate
Usually mascarpone cream is made for "Tiramisù" an Italian cake well known all around the world and Italians make Tiramisù in different family way!
I suggest to try the cream with "amaretti", you'll appreciate!

Ingredients for 4 cups(1):
250g. mascarpone cheese room temperature
3 whole eggs room temperature
3 spoon of sugar
some amaretti cookies
1 tablet of bitter chocolate 70%
4 strawberries and 4 cookies as decoration
In a bowl beat egg whites with electric whip, they must be soft but firm (2,3)
In another bowl mix yolks and sugar (4,5) beat with electric whip making them light yellow: .Add egg whites and gently mix all with a spoon.Add mascarpone and mix all for few seconds so the cream will be homogeneous and without lumps(7).
Use the cups that you prefer , I used Martini glasses, and put a cream layer, than amaretti crumbs (make medium crumbs, at least 1/2 cm.), another cream layer and I finish with chocolate flakes. Put an amaretto and a strawberry on the top and serve!
Notes:
1) mascarpone and eggs must be at the same temperature to avoid lumps:
2)when you add mascarpone don't beat too much or the cream will limp
3)if you prefer, you can mix amaretti and chocolate with the cream.
