octopus salad with potatoes

Last friday, strange thing in Qatar, the sky has become grey and it started to rain. So, i thought: ok, it's raining, but...you know what i do to bring back the good weather and good humor? I will prepare a delicious octopus salad with potatoes, a typical italian summer recipe. In fact, the sun has shined again on my table and on my mood!!
Ingredientes:
for 4 serving
1 kg Octopus
350 gr. potatoes
6 cl. olive oil
1/2 lemon
2 tablespoon vinegar
1 tablespoon chopped parsley
salt and black pepper to taste
Process:
Clean the octopus, removing the internal organs, eyes and beak. Wash well under cold running water. Place the potatoes in a pot full of cold salted water. Place the pot on the heat and after the water begins to boil, cook until the potatoes can be easily poked with a fork. Drain and let cool. Meanwhile, cook the octopus in a pot with salted water for at least 25/30 minutes or until it is soft enough to poke it easily with a fork. Drain and cut into pieces. Peel the potatoes and dice. Mix octopus and potatoes together and add salt, lemon juice, olive oil, vinegar, pepper and chopped parsely.
Notes:
It's a cold salad but it's good warm also.
