Pasta Brise' has a neutral taste, however it is possible to give it a sweet taste by adding sugar or some specific flavors, such as cocoa powder. It is extremely brittle and takes on a less intense yellow color of the pastry, because does not contain eggs.

Useses:

  • Basis for pies or quiche

  • Basis for tartes for starters

  • Basis for fruit cakes or cream cakes

Ingredients:

  • 150 gr. cold butter

  • 300 gr. flour

  • 5 gr. salt

Process:

Mix all trying not to warm up the dough, and adding cold water.

Let the mixture cool for 30 minutes in the refrigerator, then roll out the dough on a baking sheet by making some holes on the dough with the fork.

Coat the dough with an alluminium foil and fill with dried beans to avoid that the edges fall.

Half way during the cooking (180 degrees), remove foil and beans and

finish cooking ( total 25/30 minutes ).                                          

Notes:

30 minutes before put flour and butter in the same container in the refrigerated conditions, must have the same temperature.
