Pasta with eggplants, sword fish and mint

 

 

 

 

 

 

 

 

 

 

 

 

 

Today i went in the supermarket to buy something for my daughter and i found the sliced swordfish. It'very difficult to find in Doha so i took it right away. Once got home, i tought to preparing something typical of my land: casarecce with swordfish, eggplant and mint. I was lucky to have all the other ingredientes at home already!

 

 

ingredients:

  • 2 eggplants

  • 350g of sliced sword fish

  • mint

  • 250 g cherry tomatos

  • evo oil

  • salt and pepper

  • pasta (caserecce preferably)

  • garlic

 

Cutting the eggplant into cubes of 1 cm. Put them in a bowl with water and salt and leave them for 30 minutes, just the time that the eggplant lose the bitterness. then wash  and dry them with a cloth. Put some oil in a pan to fry the eggplant cubes, when they are golden, remove and put them on the side. cutting the fish into cubes of 1 cm also and the tomatoes in 4 pieces. Pour some oil in a pot and when heated, put garlic and after few minutes add the tomatoes. A couple of minutes later add the eggplant and the fish and continue cooking for 5/6 minutes. Meanwhile cook the pasta in a plenty salted water. once cooked, drain the pasta and mix it with all the ingredientes. The pasta is ready, just add some mint leaves and serve it!!!
