The pastry is a dough of flour and other ingredientes such as salt, sugar, butter, eggs and flavorings, worked up to take on a rather compact texture. The pastry is a sweet dough used to produced cakes, sweet, cookies and pies.  

Ingredients:

  • 300 gr. flour

  • 150 gr. sugar

  • 120 gr. butter

  • 1 egg

  • 1 grated lemon rind

  • a pince of salt

Process:

Work the softned butter and sugar with a wooden spoon, until it becomese creamy. Add the egg, vigorously. Add the flour, salt and mix quickly by hand. Form a ball  and wrap it in plasticwrap and put in the fridge for 20 minutes, then live it  10 minutes at room temperature before rolling out the dough. Cook for 20 minutes at 180 degrees.

 

 

Notes:

  • The butter must be at room temperature.

  • The butter should not be melted but soft.

  • Don't work the dough too much.
