pizza margherita
Pizza it's the most famous plate in the world, but not everyone knows that it was invented in Italy, by a neapolitan pizza maker in honour of the first queen of Italy Margherita and not, as many belives, in America. Pizza is a typical italian plate maked with fresh yeast and it's digestably, crispy and tasty.
Ingredientes:
for 6 servings
FOR DOUGH:

1 kg. manitoba flour or all-purpouse flour

25 gr. fresh yeast

600 ml. water

20 gr. salt
FOR DRESSING:

8 cl. olive oil

450 gr. mozzarella
-
450 gr. crushed tomatoes
-
basil leaves to taste
-
salt to taste
Process:
On a marble work surface, shape the flour into a well. Place the yeast, salt and warm water in the center. kneadthe dough vigorously with your hands for 15-20 minutes, or in a mixer, until the dough is soft and smooth. Once you have the right consistency, adding a bit of water or flour if necessary, shape the dough into a ball. Cover with a cloth. Let rise for 3 or 4 hours at room temperature for about an hour in a warm place. Once the dough will be double in volume, make 6 loaves in spherical shape, cover with a sheet of plastic wrap and let them rise aat room temperature for a couple of hours. Now the dough is ready to make pizza, knead the dough, then flattening them using your finger. Prepare the tomato sauce and place it in a bowl. add a pinch of salt and 1/3 of olive oil. Use a ladle or a spoon to spread a good amount of tomato sauce on the pizza. Then, cover with mozzarella, torn into pieces. Garnish with a couple leaves of basil and bake in oven for 10/ 15 minutes. Once ready, remove the pizza from oven. Garnish with more basil, and a drizzle of oil.
