Stuffed calamari (squids) are one of my Mother's recipes that I learned for first, maybe because  I was so patient to fill all them…….

I always liked her version very much and so I would like to share it with Milena and with you all.

Ingredients for 2/3 persons:

 

6 small cleaned  calamari or 3 medium size with their tentacles;

250 g bread crumbs;

10 pine nuts;

a tuft of parsley;

20 capers;

grated parmesan cheese 2/ 3 spoons;

salt and pepper;

extra virgin olive oil

Let start by cutting tentacles in small pieces (1), then fry them in a pan with extra virgin olive oil

-two spoon(2).

Put fried tentacles away and mix in a bowl bread crumbs, parmesan, chop parsley, pine nuts, chop capers and mix.

Add tentacles with oil and some water (3):  it must be soft, or add some more oil.

 

 

 

 

 

 

 

 

Now take a squid (4)and full it for 2/3 with the stuff and close it with a toothpick (5).

Put  all the stuffed squids a in oily baking tin or use baking paper (6) and cook in 200° preheated owen for 7/10 minutes.

 

 

 

 

 

 

 

 

Serve with salad or potatoes and parsley and…….buon appetito!!!!
