Tomato sauce is any of a very large number of sauce made primarily from tomatoes, usally to be served as part of a dish ( rather than as a condiment ). The simplest tomato sauces consist just of chopped tomato flesh cooked in a little olive oil and seasoned with salt, onion and... this is my secret, sugar.

Ingredients:

  • 1 kg. fresh tomatoes

  • 120 gr. onion

  • 6 cl. olive oil

  • 6 leaves of basil

  • salt to taste

  • black pepper to taste

  • sugar to taste

Process:

Wash the tomatoes and remove the seeds. Chop and place in a pot with the oil and the onion and basil, than add salt, black pepper and sugar. Cover the sauce and cook for 35/40 minutes. Uncover and reduce, adjust the flavor with a  pinch of salt, pepper and sugar. Pass everything through a vegetable mill and use the sauce to dress pasta or as a base for other recipes.

Notes:

You can prepare all the sauce you want because it is possible can be kept it in the fridge for 3 days and it can also frozen and kept in the freezer for 3 months.
